20 ga or 22 ga mild steel for body panels depending on how much shaping and welding you intend to do with it. For a fuel cell, stainless or aluminum.

Edit, I get mine from one of 2 local metal suppliers, stock car steel or race city steel. You need to search your area for suppliers.

Do you use the aluminized sheets?

 

By the way the stock tank is steel, so why not make it out of that?

Yes mostly but it depends on the application. We never use aluminized steel because it's nasty to weld. It's used for heating and air duct work in houses mostly. I recommend aluminum or stainless for a fuel cell (assuming you are building a full custom cell) because it's corrosion resistant, where as mild steel will rust. Plus a stainless or aluminum tank hanging out from under the back of a car just looks bad tail.
