Overheating while idling

Coolant temp rises while idling, but goes back down to normal when driving. Is this just leaky head gasket or more serious issue. Not smoking or losing coolant that i can tell, oil is not contaminated. Although I am using the Evan's waterless coolant. Thoughts on what to look for before I tear down, hoping not to have to get machine shop work done. Motor rebuild has 1k, recent dyno 325whp 395 torque Magna MPI 1000ID's Turbonetics T3/T4 @ 24 psi, was shooting for 30 psi but turbo to manifold bolts loosened up, exhaust leak

Check your fans.  Running hot when idling is lack of air flow.

An inexpensive couple of tests you could do would be both a compression and leakdown test. Along with that you could replace your thermostat for safety. Otherwise like ucw458 said double check that your fans are working correctly AND that they are wired up to move air in the right direction.

Check your fans and l would make sure system is burped. I run 60% water to 40%coolant large mechanical fan w shroud.Never passed 18O deg on hottest day. Mpi megasquirt t3/t4 turbonetics and all kinds of other gizmos lol

Besides what was stated above.

even if the fans are spinning, this does not mean they are moving the proper amount of AIR...

if original fans they could be worn out and not able to pull enough air.

May the force be with you... you are going to need it.
as things warm up do you see coolant flow? Take off the cap and let it warm up at aprox 180 you should see coolant flow in the radiator. If not your thermostat could be to blame. What fuel are you running?
